Cleaver
Very close to the Nakiri and Chopper. Cleaver knives have a similar aesthetic to a Chopper, however, are much wider in the blade. They make use of a broad, rectangular shape and a hollow edge which is the sharpest part of the knife.
The Cleaver works as the best option for chopping meat or possibly a range of different vegetables. The square shape and straight edge of the Cleaver allows chefs to cut through to the chopping board without needing to rock the blades backwards and forwards. They can simply cut straight down in a single motion.
Due to its strength and size, the Cleaver is often used for larger vegetables such as sweet potatoes and squash. They also cut through large vegetables such as cabbage and lettuce without hassle. If required, the sharp edge of the blade can be used to create thin even slices, allowing chefs to add ribbons of vegetables for garnish.
